Is this a potato salad? Is it Eggs Benedict? Is it breakfast? Is it dinner? I neither know nor care. It is all of the above. It is crispy roasted smashed potatoes. It is fresh spears of springtime asparagus (still with a little crunch). It is jammy eggs and buttery, lemony hollandaise draped over everything.
I’d eat it for breakfast. I’d also eat it at a picnic with smoky barbecued field mushrooms and sausages. You could serve it alongside a zesty, lemony herb salad or cook up a big salmon, throw fresh dill on everything and call it lunch. It’s really up to you.
As far as I’m concerned, when roast potatoes and molten butter sauces are involved, there are no wrong choices.
